~小品文章分享~開箱文請往下喔~ 參杞羊頭 【所屬菜系】 川菜 【特點】 頭肉肥爛，荸參軟糯，湯汁清鮮，並具有補脾益腎之功效。 【原料】 羊頭一隻（約400克）。 黨參18克、枸杞10克、陳皮10克、山藥24克、荸薺60克、火腿30克、雞蛋殼3個。上湯500克、食鹽5克、味精1克。 【製作過程】 將黨參、山藥分別洗淨後，燜軟切片。枸杞去雜質。將羊頭皮面燎去絨毛，放入溫水中刮洗乾淨，砍成兩半，取出羊腦，洗淨血汆，放入鍋內，加清水和雞蛋殼，煮至羊頭熟，取函洗淨。再將羊頭放入鍋內，加清水適量。下陳皮、火腿、荸薺，武火燒沸，撇去浮沫，移炆火上燉把，取出羊頭，拆骨後切成條塊。將荸薺，火腿切片，放入盆內。羊肉塊放在荸薺上面。黨參、枸杞、山藥洗淨後，放在羊頭肉上面，加入原湯，加蓋上籠蒸綜合堅果1小時左右取出，用食鹽、味精調味即成。 禎祥食品 |
